Rose, cacao & grapefruit pure bliss bites

Ingredients

200 g / 1 cup pitted Medjool dates
75 g / ¾ cup ground almonds
2 tbsp raw cacao powder (15 g)
1 tbsp tahini (15 g)
½ tsp cinnamon
¼ tsp cardamom
⅛ tsp coarse sea salt
½–1 tsp rose water (2–5 ml), adjust gently to taste
1–2 tsp grapefruit zest (½–1 grapefruit’s zest)

100–150 g vegan white chocolate (for coating)

Dried white rose petals (for decoration)

Method

  1. Blend all the ingredients until the mixture forms a soft dough.

  2. Roll into a log and cut into equal portions, then shape gently into balls.

  3. Place in the fridge to firm.

  4. Melt the white chocolate and dip each ball, placing them on a tray lined with parchment paper to cool.

  5. Decorate with a rose petal on top.

  6. Refrigerate, freeze briefly, or simply place outside if the weather is cold.

I was inspired to make a small treat that feels like a gentle ritual for both the heart and digestion to share after my beautiful teacher, Ayala Gill’s recent yin yoga and cacao ceremony at HOME.

These bites carry a beautiful symbolism. Cacao supports circulation, mood and pleasure. Rose soothes and opens the heart while calming the nervous system. Grapefruit brings brightness and helps the body release what it no longer needs. Warming spices support digestion and grounding.

Together they tell a quiet story about the connection between the heart and the gut, two centres that speak to each other constantly.

They are lovely to share, especially in small gatherings, ceremonies, or simply as a gesture of care.

Yin–Yang Balance

These bites lean slightly yang through the warming spices, cacao and tahini, which support digestion and circulation. The yin sweetness of dates and white chocolate, along with the floral softness of rose, brings balance, while grapefruit adds brightness and movement. Together they create a gently warming yet emotionally soothing treat that nourishes both the heart and the gut.

Notes & Variations

These small bites are naturally rich and satisfying, so a little goes a long way. Their softness from the dates and almond meal makes them easy to digest, while the cacao and spices add warmth and depth.

  • For a deeper citrus note, you can increase the grapefruit zest slightly or add a few drops of food grade grapefruit or lemon essential oil to the mixture.

  • If you prefer a less sweet version, reduce the dates slightly and increase the ground almonds or add a spoon of coconut flakes or cacao nibs for texture.

  • They also keep beautifully in the freezer, making them a convenient small treat to share with guests or offer as a ceremonial bite after meditation, yoga or breathwork.
